One-Pot Beef Ramen Noodles

This easy and flavorful One-Pot Beef Ramen Noodles recipe combines tender ground beef, savory sauce, and ramen noodles for a quick weeknight dinner. It’s a satisfying meal, all cooked in one pot, making cleanup a breeze.

Ingredients

For the Beef and Noodles:

  • 1 lb (450g) ground beef
  • 2 packs (3 oz each) ramen noodles (discard seasoning packets)
  • 1 tablespoon olive oil (optional, if needed)
  • 1/2 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup carrots, julienned or shredded
  • 1/2 cup bell peppers, thinly sliced
  • 1 cup broccoli florets
  • 1/4 cup green onions, chopped (optional for garnish)
  • 2 cups beef broth or water

For the Sauce:

  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon crushed red pepper flakes (optional for heat)

Instructions

1. Cook the Beef:

  • In a large pot or deep skillet, heat olive oil over medium-high heat (if using).
  • Add ground beef and cook until browned, breaking it up with a spoon (about 5-7 minutes).
  • Once fully cooked, drain excess fat if necessary and set the beef aside on a plate.

2. Sauté Vegetables:

  • In the same pot, add onions and garlic. Sauté until softened and fragrant (about 2-3 minutes).
  • Add carrots, bell peppers, and broccoli florets, and cook for another 4-5 minutes until vegetables are tender but still crisp.

3. Prepare the Sauce:

  • In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, brown sugar, and red pepper flakes (if using).

4. Add the Noodles and Beef:

  • Pour beef broth (or water) into the pot and bring it to a simmer.
  • Add the ramen noodles (break them up if needed to fit in the pot) and return the browned beef to the pot.
  • Stir to combine, allowing the noodles to cook in the broth for about 3-5 minutes, until softened and cooked through.

5. Stir in the Sauce:

  • Pour the prepared sauce into the pot and toss everything together until the noodles, beef, and vegetables are evenly coated with the sauce.
  • Continue cooking for 1-2 minutes to allow the flavors to meld together.

6. Garnish and Serve:

  • Remove the pot from heat and garnish with chopped green onions (optional).
  • Serve hot, and enjoy!
